Manuel Villacorta, MS, RD, CSSD, is a State of California Registered Dietitian and Board Certified Sports Dietitian with over 12 years of experience as a professional, passionate weight-loss specialist dedicated to improving quality of life for his clients.
He has counseled a diverse population in a wide range of settings, from clinical to community service. Specializing in organized, individualized nutrition programs, Manuel's program has empowered hundreds of clients to make appropriate diet, nutrient and lifestyle changes.
Before the 2004 launch of his successful private practice, MV Nutrition, Manuel worked as a public health nutritionist for the San Mateo County Public Health Department, with his primary focus on pediatric and prenatal nutrition, and as a clinical dietitian for Kaiser Permanente in San Francisco.
Manuel is committed to teaching sound nutrition principles in his work and in his community. In addition to private counseling, Manuel has given countless public presentations on adult and gestational diabetes, weight control, cholesterol, cardiovascular disease, breast- feeding, infant and toddler nutrition, prenatal nutrition, sports nutrition, general nutrition, and stress management to professional and collegiate organizations and community groups.
Considered one of the leading nutrition experts on the West Coast, Manuel is a compelling, charismatic communicator. His warm, approachable style, along with his strong bilingual proficiency in both English and Spanish, have made him an in-demand expert for statewide television and radio appearances promoting health and nutrition.
Manuel acts as a spokesperson for Foster Farms' health and nutrition campaign on television stations such as Telemundo and Univision, and La Unica radio stations. His goal is to make complicated health messages more accessible and practical for the community.
Other corporate and non-profit organizations rely on Manuel's exceptional abilities. He is the spokesperson and/or representative Nutritionist for Presidio Sports and Medicine, DiakadiBody, Glide Memorial United Methodist Church (meal program for the homeless), and the San Francisco AIDS Marathon. In addition, he currently holds a summer session faculty position with the School of Nursing at the University of San Francisco.
Manuel received his Bachelor of Science degree from the University of California, Berkeley, in Nutrition and Physiology Metabolism. He earned a Master of Science in Nutrition and Food Science from San Jose State University. Manuel has been the recipient of numerous prestigious awards for his research, including the Outstanding Master of Science Degree Award from San Jose State University's Department of Nutrition and Food Science.
